I’m sure you’re not at all wondering why I’m posting this beautifully GREEN pistachio dessert recipe the day after St. Patrick’s Day. Posting this yesterday would have perfect sense, wouldn’t it?

Well, I had every intention of posting this yesterday, on the afore-mentioned holiday, but my two, sweet little girlies came up to me and asked with big eyes if I could take them roller-skating. I had so much I needed to get done, and of course, everything felt so incredibly pressing and important, but since you are reading this post the day after St. Patrick’s Day, yep, you got it – spending time with my daughters won out! I came home feeling like I had been run over by a very large herd of animals or a convoy of army tanks (the girls needed me to run beside them and pretty much hold them up.) I’d do it all over again, though, to see their little faces beam with excitement and pride in their newfound skill. I’m learning that people trump projects and “to-do” lists every time!

Anyhoo, I will tell you something right up front. This is not health food. Nothing in this dessert has any sort of known health benefit (other than making your taste buds supremely happy!)

I got the recipe from a co-worker when hubby and I lived in the Upper Peninsula of Michigan. The recipe was not hers, and I don’t know where she got it from, but let me tell you, it’s really good. It’s totally light and creamy, and each layer is better than the last! The pistachio and cool whip sweetness pairs perfectly with the tangy cream cheese layer and the nutty, buttery, melt-in-your-mouth crust. This dessert is perfect when you are looking for something that is not overly rich or super-sweet!

Hubs requests this pistachio deliciousness quite frequently, but since it’s not health food, I don’t make it super-often. (At least, not as often as he would like it!)

This recipe is so simple, but just takes a little patience, because of the layering. It’s worth it, though! Promise!

Layered Pistachio Dream Dessert


  • 1 1/2 cups flour
  • 1/2 cup butter (1 stick, cold and cubed)
  • 1/2 cup chopped pecans (you can also sub walnuts)
  • 1 (8 ounce) package cream cheese
  • 2/3 cup powdered sugar
  • 1 (16 ounce) container Cool Whip
  • 2 3/4 milk
  • 2 (8 ounce) packages Instant Pistachio Pudding Mix


  1. Preheat oven to 375.
  2. Add flour, butter, and nuts to food processor. Pulse until a crumbly dough forms.
  3. Press mixture into 9"x13" pan, and bake for 15 minutes. Set aside to cool completely.
  4. Beat cream cheese, powdered sugar, and 1/2 container of Cool Whip with electric mixer. Spread over cooled crust.
  5. Beat milk and pudding mix with electric mixer on low setting. Let stand until set. Carefully spread over cream cheese layer.
  6. Spread the remaining half Cool Whip over the pudding layer.
  7. Top with additional pecans, walnuts, or pistachios, if desired.
  8. Cover and refrigerate one hour. Slice into 2"x2" squares.
  9. Store in the refrigerator for up to five days.

Spring and Summer are just around the corner, and this dreamy pistachio dessert fits the bill for any potluck, party, or family get-together that you might need a dessert for! (Just stash away a piece for yourself, though, ’cause I guarantee there won’t be any left!)
